Creamed Corn Bread
Ingredients:
- 1 cup whole-grain flour
- 1 cup yellow cornmeal
- 2 1/2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 2 egg whites
- 1 cup skim or soymilk
- 3/4 cup creamed corn
- Vegetable cooking spray
Directions:
Preheat the oven to 400 degrees. In a bowl, mix all of the dry ingredients. In a separate bowl,
mix all of the wet ingredients. Slowly add the dry ingredients to the wet ingredients, blending
well. Spray an 8 x 12-inch baking dish with cooking spray and pour in the batter. Bake for about
20 minutes or until a toothpick inserted in the center comes out clean.
