Cranberry Pumpkin Bread
Ingredients:
- 2 cups whole-wheat pastry flour
- 1/3 cup light brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/4 teaspoons pumpkin pie spice
- 1 cup cranberry sauce
- 3/4 cup cooked pumpkin, mashed
- 1/4 cup apple juice
- Vegetable cooking spray
Directions:
Preheat the oven to 350 degrees. In a bowl, mix the flour, sugar, baking powder, baking soda,
and pumpkin pie spice, mixing well. Add the remaining ingredients and stir until the mixture is moist.
Spray an 8 x 4-inch loaf pan with the cooking spray and pour in the batter, smoothing out evenly.
Bake for 45 to 50 minutes, checking the doneness by inserting a toothpick in the center. If it
comes out clean, the bread is done. Remove from the oven and let stand for about 15 minutes before cutting.
