Corn Fritters



Ingredients:

  • 1 cup plus 2 teaspoons flour
  • 1/4 teaspoon baking powder
  • 1 egg or egg substitute
  • 1/2 cup frozen corn, thawed
  • 1/2 cup cream style corn
  • 2 1/2 tablespoons red bell pepper, chopped
  • Vegetable cooking spray

Directions:

In a bowl, mix the flour, baking powder, egg, frozen and cream style corn, and bell pepper. Spray a non-stick skillet with cooking spray. Drop the batter by tablespoons into the skillet, forming fritters. Cook on medium heat about 2 to 3 minutes or until golden brown, then flip over, and cook the other side, about 2 minutes.

Serves 4.
