Corn Fritters
Ingredients:
- 1 cup plus 2 teaspoons flour
- 1/4 teaspoon baking powder
- 1 egg or egg substitute
- 1/2 cup frozen corn, thawed
- 1/2 cup cream style corn
- 2 1/2 tablespoons red bell pepper, chopped
- Vegetable cooking spray
Directions:
In a bowl, mix the flour, baking powder, egg, frozen and cream style corn, and bell pepper.
Spray a non-stick skillet with cooking spray. Drop the batter by tablespoons into the skillet,
forming fritters. Cook on medium heat about 2 to 3 minutes or until golden brown, then flip over,
and cook the other side, about 2 minutes.
Serves 4.
