Banana Bran Muffins
Ingredients:
- 1 1/4 cup flour
- 1 cup oat bran
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup rice or soymilk
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
Directions:
Preheat oven to 400 degrees. In a bowl, mix the flour, oat bran, sugar, baking powder, baking
soda, and salt. In another bowl, whisk in the milk, applesauce, and vanilla. Slowly add the
milk mixture to the dry ingredients, stirring just to combine, not over mixing. Add in the bananas.
Pour the batter into muffin cups. Bake for 20 to 25 minutes or until a toothpick inserted in the
center comes out clean.
