Sour Cream Banana Bread
Ingredients:
- 1 cup banana, mashed
- 1 cup sour cream
- 2 1/2 tablespoons white grape juice
- 1 1/3 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Vegetable cooking spray
Directions:
Preheat the oven to 350 and spray a loaf pan with vegetable cooking spray. In a bowl, mix the
banana and sour cream until creamy; set aside. In another bowl, mix the juice, sugar, eggs,
vanilla, flour, baking powder, and baking soda until well blended. Slowly mix into the banana/sour
cream mixture until again creamy. Pour into the loaf pan and bake for 45 to 50 minutes. Check the
doneness with a toothpick - if it comes out clean after inserting in the center, the bread is done.
