Sour Cream Banana Bread



Ingredients:

  • 1 cup banana, mashed
  • 1 cup sour cream
  • 2 1/2 tablespoons white grape juice
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Vegetable cooking spray

Directions:

Preheat the oven to 350 and spray a loaf pan with vegetable cooking spray. In a bowl, mix the banana and sour cream until creamy; set aside. In another bowl, mix the juice, sugar, eggs, vanilla, flour, baking powder, and baking soda until well blended. Slowly mix into the banana/sour cream mixture until again creamy. Pour into the loaf pan and bake for 45 to 50 minutes. Check the doneness with a toothpick - if it comes out clean after inserting in the center, the bread is done.
