Pinto Bean Chili
Ingredients:
- 1 1/2 garlic cloves, minced
- 1 onion, chopped
- 1 can pinto beans, with juice
- 1 package soy ground round or tofu
- 1 can corn
- 1 can tomato sauce (8 ounces)
- 1 cup water
- 1 package taco seasoning
- 2 tablespoons chipotle chili sauce
- Cabbage, shredded
- Radish, shredded
- Onion, diced
- Baked blue tortilla chips
- Extra virgin olive oil
- Salt and pepper to taste
Directions:
Sauté onion and garlic in oil while covered, then add the remaining ingredients except for the
shredded cabbage, radish, and diced onion. Cook on medium-low for 1 hour, stirring often.
Serve with tortilla chips and use the three remaining ingredients as toppings.
