Pinto Bean Chili



Ingredients:

  • 1 1/2 garlic cloves, minced
  • 1 onion, chopped
  • 1 can pinto beans, with juice
  • 1 package soy ground round or tofu
  • 1 can corn
  • 1 can tomato sauce (8 ounces)
  • 1 cup water
  • 1 package taco seasoning
  • 2 tablespoons chipotle chili sauce
  • Cabbage, shredded
  • Radish, shredded
  • Onion, diced
  • Baked blue tortilla chips
  • Extra virgin olive oil
  • Salt and pepper to taste

Directions:

Sauté onion and garlic in oil while covered, then add the remaining ingredients except for the shredded cabbage, radish, and diced onion. Cook on medium-low for 1 hour, stirring often. Serve with tortilla chips and use the three remaining ingredients as toppings.
