Teriyaki Tofu
Ingredients:
- 1/4 cup teriyaki sauce
- 3 tablespoons water
- 4 teaspoons soy sauce
- 1 package light, firm tofu (10 1/2 ounces)
- 1/3 cup vegetable broth
- 2 1/4 cups fresh mushrooms, sliced
- 1/3 cup red onion, sliced thin
Directions:
Preheat the oven to 375 degrees. In a 12 x 8-inch baking dish, mix the teriyaki sauce, water
and soy sauce, blending well. Slice the tofu into 8 cutlets about 1/2-inch thick. Place the
cutlets in the sauce mixture, turning to coat both sides. Add the red onions and mushrooms,
and let stand at room temperature for 20 minutes, turning several times. Bake the tofu onions
for 12 to 15 minutes or until completely heated.
Serves 4.
