Cucumber Raita
Ingredients:
- 1 cup non-fat plain yogurt
- 3 tablespoons skim milk
- 1 cup cucumber, diced
- 2 scallions, diced
- 1/3 teaspoon sugar
- 1/4 cup roasted cumin seeds, crushed
- Dash of chili powder
- Fresh black pepper
Directions:
In a bowl, beat the yogurt and milk until smooth. Add the cucumber, scallions, sugar, and half
of the cumin seeds. Mix well and sprinkle with the chili powder. Create an inner circle in the
Raita and sprinkle with the remaining cumin seeds, and season to taste with pepper.
