Cauliflower Bhaji
Ingredients:
- 1 cup water
- 2 teaspoons cumin
- 2 teaspoons coriander
- 2 teaspoons paprika
- 1 teaspoon black mustard seeds
- 1/2 teaspoon turmeric
- 4 garlic cloves, minced
- 1/2-inch fresh ginger, crushed
- 1 onion, chopped
- 1 red chili, chopped
- 1 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 teaspoon vegetable stock
- 1 large head of cauliflower
- 1 can tomatoes (10 ounces)
- 2 tablespoons tomato paste
- 3/4 cup sweet corn
Directions:
Bring the water to a boil in a skillet. Add the cumin, coriander, paprika, black mustard seeds,
and turmeric. Bring to a boil for 5 minutes, adding water if needed. Add the garlic, ginger,
chili, and onion, cooking on high and stirring occasionally. Add the base of the cauliflower
and green stalks. Simmer until soft. Add the cauliflower florets and again add water if needed.
Next, add the tomatoes, vegetable stock, salt, and pepper, simmering for 15 minutes. Add in the
sweet corn and tomato paste. Heat through and serve with basmati rice.
