Pear Salsa
Ingredients:
- 2 plum tomatoes, diced
- 2 firm pears, peeled, cored, and diced
- 1 1/2 tablespoons lemon juice
- 6 large scallions, chopped (green part only)
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons sherry wine vinegar
- 1 1/2 teaspoons honey
Directions:
Blanch the tomatoes in a saucepan with boiling water for 1 minute. Rinse under cold water and
remove skin. Dice and place in a bowl. Add the remaining ingredients. Chill and serve.
