Pea Guacamole Dip
Ingredients:
- 2 packages frozen peas, thawed (1 pound each)
- 1/2 bunch fresh cilantro, trimmed and chopped
- 2 garlic cloves, minced
- 1/3 cup fresh lemon juice
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 teaspoon ground cumin
- 1/8 teaspoon crushed red pepper flakes
- 1/2 cup fresh tomato, diced fine
- 1/2 cup scallions, chopped fine
Directions:
In a food processor or blender, mix all the ingredients except the tomato and scallions.
Blend until smooth and then add in the tomato and scallion for texture.
