Mango Salsa
Ingredients:
- 1 tomato, diced
- 1 green bell pepper, sliced
- 1 cup mango, peeled and diced
- 1/4 cup red onion, chopped
- 2 1/2 tablespoons cilantro, chopped
- 2 tablespoons green onions, chopped
- 2 1/2 teaspoons Serrano chili, chopped
- 1/4 teaspoon ground cumin
- 1 garlic clove, minced
Directions:
Place the diced tomato in a bowl; set aside. Cut the bell pepper in strips. Place the bell pepper
skin side down on a baking sheet lined with foil. Broil 3 inches from the heat source for 10
minutes or until the pepper is blackened. Place the pepper in a plastic bag and seal. Let stand
for 15 minutes. Peel and throw the skin away. In a bowl, mix the pepper, mango, and remaining
ingredients with the tomato mixture. Cover and chill.
