Corn Salsa
Ingredients:
- 1 cup corn
- 1/4 cup water
- 3 1/2 tablespoons apple cider vinegar
- 8 ounces mixed watercress, mustard greens, and arugula, julienne style
- 2 red Serrano chilies, sliced thin
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
Directions:
In a saucepan, mix the corn and water. Cook for 3 minutes until the corn is tender and the
water evaporated. Place in a mixing bowl. Heat the vinegar in a skillet and wilt the greens
for about 25 seconds. Add the ingredients from the mixing bowl. Add the chilies, salt, and pepper.
